How to Scale a Recipe Without Ruining Dinner

Scale a recipe with a conversion factor—then ease up on salt, spices, and leaveners, and don’t assume cook time doubles with the batch.

You're cooking for six instead of four, or you only need half a batch of cookies. The math looks simple—until the chili tastes like a salt lick or the doubled cake sinks in the middle. Scaling a recipe isn't just multiplying; a few quiet rules decide whether the dish still tastes like itself.

Short answer: To scale a recipe, divide the servings you want by the servings the recipe makes, then multiply most ingredients by that factor. Salt, strong spices, and leaveners usually need a lighter hand. Cook time does not scale with the factor — pan depth and doneness cues do.

Start with the conversion factor

Desired servings ÷ original servings = your factor.

Recipe serves 4, you want 10 → factor = 2.5.
Recipe serves 8, you want 4 → factor = 0.5.

Write the factor at the top of the card or note before you touch a measuring cup. Multiply down the ingredient list once, then cook. Mid-prep arithmetic is how you double the garlic twice.

What scales straight across

For weeknight cooking, these usually take the full factor:

  • Proteins and vegetables
  • Grains, pasta, beans
  • Flour and sugar in most batters (within about half to double)
  • Broth or water that defines the dish volume (soups, stews) — with a caveat below

If you're moving from 4 to 8 servings of roasted vegetables, double the veg and the oil. Same sheet-pan coverage matters more than the clock: two pans at the original depth beat one overcrowded pan.

What does not scale on autopilot

Salt and dried spices. When you double or triple, start around 75% of the scaled salt and spice, taste, then finish. You can always add more. You cannot pull cayenne back out of a pot of chili.

Leaveners (baking powder, baking soda, yeast). Beyond about 2×, full-factor leavening gets unreliable. For a doubled quick bread, many bakers use closer to 1.5–1.75× the chemical leavener and watch the bake. For yeast doughs scaled way up, more dough holds heat differently — temperature and proof cues beat blind multiplication.

Eggs when halving. Beat the egg, weigh or measure roughly half (a large egg is about 50g out of shell), or cook the full batch and freeze half if the math gets silly.

Braise and soup liquid. Don't blindly double the liquid because the pot surface and reduction rate change. Cover the solids, then adjust as it cooks.

Cook time. A doubled casserole in a pan twice as wide but the same depth often needs nearly the same time. A doubled casserole packed deeper needs longer — check the center, don't trust the original minute count.

Worked example: chili for guests

Original chili serves 4. You're feeding 8.

  • Beans, tomatoes, meat, onion, stock base ingredients → ×2
  • Chili powder, cumin, salt → start at ×1.5, simmer, taste, finish
  • Use a pot that keeps a similar depth, or two pots if yours is small
  • Taste at the usual simmer window; don't assume "double the meat means double the time"

Same logic for a sheet-pan dinner: two trays at original thickness beat one tray piled high.

When to refuse the 4× and cook twice

Opinion: Past about double, make two batches instead of forcing a giant single pot — unless you have the equipment and you've cooked that dish scaled before. Home burners, mixers, and ovens have limits. Two reliable batches beat one heroic failure that ate your Saturday.

Soups and braises forgive bigger jumps better than baking. Cookies, cakes, and breads are where "just multiply everything" quietly goes wrong.

Keep your scaled notes where you'll find them

Once you've proved a 1.5× or half-batch version of a family recipe, write the adjusted amounts on the card — or better, save the working version next to the original so next month's you doesn't reinvent the factor at 5:40 p.m.
